eBUZZ! Healthy Eating [from Issue 2011-4]

A Festive, Healthy Salad for your Barbeque
Provided by Pam Mattia, BeeAlive Director of Operations

Bok Choy Salad

1 head bok choy, chopped (both leaf and stem)
1 bunch scallions, chopped
3⁄4 cup slivered almonds
3⁄4 cup unsalted sunflower seeds
1 package Ramen Noodles, crumbled by hand


3⁄4 cup Canola oil
3 Tablespoons soy sauce
1/3 cup apple cider vinegar
1⁄4 cup sugar

Combine bok choy, scallions, almonds, sunflower seeds and Ramen noodles in a large bowl. Pour dressing over salad and refrigerate for several hours or overnight.
